I have been researching the popularity of Mexican food in Sweden.
I noticed that La Neta has great reviews and is the closest to authentic Mexican food in Stockholm.
Are there any taco trucks or carts in Stockholm?
Wondering if it would be popular in Sweden.

Yes I think it would be popular. However the main problem is your ability to license and run this operation. In Stockholm it will be next to impossible. In another, smaller place entirely possible.

Every once in a while an all authentic place opens up only to need to be swedified to attract enough customers to stay open.

Ask yourself, when did u last have a really good Indian in Stockholm.
It's getting better as time goes by.
But in general swedes like what they know.

While Indian food is better in the UK it can hardly be called authentic Indian food. The same goes for Mexican food in California or Texas (other border states I have no experience about).

I don't see why it would be next to impossible to get a license. There are already Thai carts on some streets in Stockholm, not to mention the regular sausage carts.
