Lincolnshire Plum Bread
Well proven family favourite recipe

Plum bread is a British traditional food, common in the North East of England. A brief moment of googling revealed that some plum bread recipes incorporate yeast and are more like bread than cake. This one is a more traditional cake-like plum bread, meant to be served sliced and buttered as a teatime (fika-time?) snack.
It's stood the test of time in my family and is simple to make, so I thought it was worth sharing.
Boil above ingredients together briefly in small saucepan then switch off and cool for at least 30 mins. Do not drain - the water stays in the pan with the fruit.
225g plain flour (all purpose flour)
1 lvl tsp baking soda
1 lvl tsp baking powder
Soften butter at room temperature. Sift flour in and rub into butter with your fingers to achieve a texture like breadcrumbs. Add baking powder and baking soda and mix. Add cooled fruit and sugar water and mix to combine to form a sticky batter mix. Transfer into lined loaf tin.
*** Cook fan 155C for 60 mins ***. The loaf, when cooked, should have a dark exterior colour and a skewer inserted into the middle should come out clean.
Allow to cool completely then Serve in slices with butter or margarine on. Wrap in aluminium foil (after cooling) and store at room temperature. It may seem strange to not add any salt, but it doesn't need it.

I see that the phantom funny-mushroom eater is getting involved with plum bread now. Wonders will never cease.

Not sure what the comment about mushroom eating refers to, but I've tried this plum bread recipe and it was lush!
