Baking prisoner banned over booze fears

A court has forbidden a cake-loving criminal from baking buns after jail chiefs suspected he might use the yeast to brew alcohol.

The 25-year-old prisoner wanted to be allowed to make pastries at the Skänninge jail in eastern Sweden. However, warders feared that to do so might threaten order and security at the facility.

"We need to keep an eye on the yeast," said prison chief Gert-Arne Sköld.

"If a prisoner, who might have problems with aggression, gets hold of the kind of alcohol that this would produce, it can have very strange effects. You could easily get problems with keeping order," Sköld told local paper Östgöta Correspondenten.

The prisoner appealed the prison’s decision to the Swedish Administrative Court, but judges agreed that there was a risk that the yeast would be used for producing alcohol rather than baking.

"This is one of the best known phenomena in the prison service - a phenomenon we have had for many years. Long before drugs came into the picture, prisoners have tried to get their hands on intoxicating substances," said Sköld.

There is something called sour dough, it is dough levened (raised) with natural yeast. Leave a litre of orange juice on the window sill and within a week it will start to ferment. Mix water and dough and leave it in a warm place and if will start to ferment. Sugar turns to alcohol, feed it with fruit which has a natural sugar content and you will soon have alcohol. It is almost impossible to stop anything sugar based turning to alcohol given a little water, warm conditions and a few days. this guy wants to bake pastries, bread yeast isnt superior to natural yeast.

The real question should be, should prisioners have the home comforts of baking? Aren´t they in prison to punish NOT to make a home from home??

I agree with with that last bit, Soft Boiled. How ridiculous. But even weirder, is that they would even consider allowing a convict into a kitchen setting where all sorts of sharp tools and utensils can be found and easily smuggled back into his cell. They are worried about yeast? What about the meat knives!

And what's the purpose of this story? The appletree or Adam?

There is a big difference between brewers yeast and bakers yeast but as soft boiled so well pointed out there is natural yeast floating freely in the air!

bakers and brewers have there own yeast only because they know what it is exactly!

it does prove beyond doubt that the custody and legal system in Sweden has not got a clue and are next to useless! (morons)

I am sure I know more knowledgeable children!

they could either use wild yeast as soft boiled said or they could give the prisoner a piece of sour (mother) dough and he could bake to his hearts content

Stupidity is sometimes good... it can make you laugh :-D I would love to visit how the prison cells here in Sweden looks like and what are the daily activities in there.

@ Sofit boiled.

It is true that the tradition was make prisoners suffere the way they have made their victims suffer. The problem is that prisoners who come out feeling that they were persecuted could committee serious crime after they are realeased. Most turn to be hardened criminals.

It is found out it is to society's advantage to reform a prisoner for the purpose of protecting society from the crimes that he/she would have committed otherwise.

This argument does not apply to prisoners who are condemned to death or life long prison terms.

As you have suggested there are other ways of making alchol and that there is no purpose in preventing the prisoner from doing what might become his profession upon release. For those who are bent to distill alcohol, increase the prison terms or cut down other privilleges.
